Jun Tea
Jun tea is a fermented beverage closely related to kombucha but produced with green tea and honey rather than black tea and cane sugar, yielding a lighter, more delicate flavor profile with floral and honey notes alongside the characteristic fermented tartness. Jun SCOBYs are adapted to honey substrates.
Jun is often called the 'champagne of kombucha' for its delicacy and subtlety relative to black tea kombucha. The use of green tea preserves higher catechin content than black tea (which has oxidized most of its catechins to theaflavins), and the honey substrate contributes floral aromatic compounds, antimicrobial properties (from hydrogen peroxide, defensin-1, and low water activity), and a distinctive sweetness character. The fermentation of honey by the jun SCOBY produces a profile distinctly different from standard kombucha.
Jun SCOBYs are purportedly adapted to honey's antimicrobial environment, containing organisms tolerant to honey's natural antimicrobial compounds. Whether jun SCOBYs are truly biologically distinct from kombucha SCOBYs is debated among fermentation scientists, as honey is routinely used in some kombucha fermentations without specialized SCOBYs. What is clear is that the combination of green tea + honey produces a different-tasting beverage, whether through genuine microbial adaptation or through substrate effect alone.
For zero-proof premium beverage positioning, jun tea offers a differentiation opportunity — it is less well-known than kombucha and can be positioned at a higher price point due to the cost of honey as an ingredient relative to cane sugar. Several craft producers in the US and UK have built premium jun tea product lines, sometimes blending with herbal infusions or cold-pressed fruit juices for additional complexity.
A sustainability dimension: honey as a fermentation substrate connects jun tea production to pollinator ecology and beekeeping — a supply chain with strong CSR and sustainability narratives. Sourcing from certified sustainable apiaries or local beekeepers provides both a quality story and an environmental credential that resonates with the core jun tea consumer demographic.
