Glycerin Base
Glycerin (glycerol) is a non-toxic, viscous, sweet-tasting polyol used in zero-proof spirits production as a mouthfeel agent, mild solvent for botanical extraction, and body-builder that partially replicates the textural contribution of ethanol to conventional spirits.
Glycerin (chemical name: propane-1,2,3-triol) is naturally produced during fermentation as a byproduct of yeast metabolism and is present in all wines (typically 4-10 g/L) and beers. It contributes sweetness (approximately 60% as sweet as sucrose at equivalent concentration) and viscosity without the psychoactive effects of ethanol. As a GRAS-approved food ingredient, it is freely permitted in beverage production in most jurisdictions.
In zero-proof spirits formulation, glycerin serves multiple roles simultaneously. As a mouthfeel agent, even small additions (2-5% by volume) noticeably increase the perceived body and 'weight' of a water-based liquid, partially replicating the viscosity contribution of ethanol. As a solvent, glycerin extracts a broader range of botanical compounds than water alone (including some lipophilic terpenes and resins that are more soluble in glycerin than water), making glycerin macerates more complex than water-only extracts. As a preservative, glycerin's hygroscopic nature reduces water activity, partially limiting microbial growth.
The sensory contribution of glycerin requires careful calibration. Below 2% concentration, glycerin is imperceptible as a distinct ingredient but contributes subtle body and sweetness. Between 2-8%, it contributes noticeable sweetness and viscosity that can be a deliberate design choice for spirits alternatives targeting a smooth, slightly sweet profile. Above 8%, glycerin becomes dominant and can produce a cloying, slightly sticky mouthfeel that most consumers find off-putting. Premium formulators use glycerin as a precision ingredient, dialing in the exact concentration for their target sensory profile.
A vegan and dietary note: glycerin can be derived from plant sources (vegetable glycerin, commonly from palm or soy) or animal sources (typically from biodiesel production using tallow). For zero-proof beverages positioned in the plant-based/vegan market, vegetable-sourced glycerin certification is important. Many NA spirit brands now specify 'vegetable glycerin' on their labels to address this consumer concern.
