Cold Infusion

Cold infusion is a botanical extraction method in which plant material is steeped in cold or room-temperature water for an extended period (typically 8–72 hours), preserving heat-sensitive volatile aromatics that would be degraded by hot infusion or steam distillation.

Cold infusion applies the same principle as cold brew coffee: at lower temperatures, extraction is slower but more selective, capturing delicate aroma compounds without triggering the Maillard reactions and volatile degradation caused by heat. For zero-proof beverage production, this makes cold infusion particularly valuable for floral botanicals (rose, violet, elderflower), fresh citrus zest, and herb materials where the 'bright' aromatic top notes are commercially important.

The practical parameters of cold infusion vary significantly by botanical and target application. Delicate florals may be cold-infused for as little as 4–8 hours before they begin to extract off-flavors from pigments and bitter compounds. Woody materials (angelica root, orris root, cassia bark) may require 24–72 hours to achieve meaningful extraction, and can tolerate longer contact without bitterness development. Understanding these windows is part of the craft knowledge that distinguishes master formulators from novice producers.

One significant advantage of cold infusion for zero-proof production is microbial safety: because ethanol is not present as a preservative, cold-infused aqueous extracts are susceptible to microbial growth during extended infusion periods. Professional producers work with clean-room protocols, UV-treated water, and rapid chilling to prevent spoilage. This additional biosecurity requirement adds process complexity relative to ethanol-based extraction.

Cold infusion also has an ecological advantage: it requires no heat energy, reducing the carbon footprint of botanical extraction. As the zero-proof industry increasingly emphasizes sustainability credentials, cold infusion's energy profile is a genuine differentiator — particularly for small artisan producers positioning themselves on environmental values.
