Linalool

Linalool is a naturally occurring monoterpene alcohol found in over 200 plant species including lavender, coriander, elderflower, bergamot, and many hop varieties. It is one of the most commonly encountered aroma compounds in the zero-proof beverage world, contributing floral, lavender, and citrus-adjacent aromatic notes.

Linalool exists in two enantiomeric forms: (R)-linalool (also called licareol), which has a lavender character and is dominant in lavender and coriander, and (S)-linalool (also called coriandrol), which has a sweeter, more citrus character and is common in coriander seed. This chiral difference produces detectably different aromas despite identical molecular formulas — a subtle distinction that sophisticated botanical formulators can leverage by choosing specific plant sources for targeted aromatic effects.

In gin production, coriander is typically the second or third most important botanical after juniper, and linalool from coriander seed is a major contributor to the classic gin aromatic profile. For gin alternatives — the dominant category in premium zero-proof spirits — replicating this linalool contribution without ethanol as carrier is a core formulation challenge. Cold infusion of freshly ground coriander seed in water preserves linalool well, though at lower concentrations than ethanol extraction.

In hops, linalool is found at significant concentrations in varieties like Hallertau Blanc, Centennial, and many New Zealand varieties, contributing the distinctive floral-citrus character that craft beer enthusiasts associate with premium hop expression. For NA IPAs and pale ales, preserving linalool through dealcoholization and supplementing through dry hopping is essential to achieving authentic hop character.

A pharmacological note: linalool is one of the terpenes studied for potential anxiolytic and sedative effects through inhalation. While clinical evidence for oral consumption of beverage linalool at typical concentrations is limited, the aromatherapy research provides a scientifically grounded narrative for floral, lavender-forward zero-proof beverages positioned on 'calm' or 'relaxation' — a narrative bridge that several premium brands exploit, with appropriate nuance.
