Hops
Hops (Humulus lupulus) are the cone-shaped flowers of a climbing plant used in brewing primarily for bitterness (from alpha acids), aroma (from essential oils and terpenes), and antimicrobial preservation. They are the defining aromatic ingredient of beer and a growing ingredient in zero-proof beverages beyond beer.
Hops have been used in brewing since the 9th century in Germany and the 15th century in England, gradually displacing a range of older bittering herbs (collectively called 'gruit') as the universal bittering and preserving ingredient in beer. The hop plant is a perennial climbing vine that produces 'strobiles' (the brewing-relevant female flower cones) with two primary functional components: lupulin glands containing both alpha acids (for bitterness and preservation) and hop oils (for aroma).
Alpha acids (principally humulone, cohumulone, and adhumulone) are not themselves bitter — they must be isomerized by heat during boiling to produce iso-alpha acids, which are the actual bitter compounds in beer. Hop essential oils, by contrast, are highly volatile and contribute aroma rather than bitterness; most are driven off during boiling, which is why late hopping and dry hopping are used to preserve them in finished beer.
Beyond beer, hops are expanding into zero-proof beverages as a standalone botanical ingredient. Hop water — carbonated water infused with whole hops or hop extracts — has emerged as a significant NA beverage category, with brands like Lagunitas Hop Refresher, Partake Brewing's hop water, and several European craft producers building dedicated hop water product lines. These beverages deliver the aromatic complexity and mild bitterness of hops in a calorie-free, alcohol-free format.
A pharmacological dimension: hops contain 2-methyl-3-buten-2-ol (MBO), a compound that converts from a precursor in the human body and has sedative properties — potentially explaining the folk tradition of using hop-stuffed pillows for sleep. This pharmacological profile is one reason why hops appear in several functional zero-proof beverages positioned on relaxation and sleep support.
